‘Kairiche Panhe’ or ‘Kairi Panha’ is a Maharashtrian name for this cool raw mango drink from Maharashtra. Raw Mango is known as ‘Kairi’ in Marathi. It is also referred to as Aam (mango)Panha or Aam Panna in Hindi.
It is a great natural refreshing drink which truly satisfies your thirst in the hot summer months. It is always better to select a natural drink to quench your thirst than to opt for artificially flavored & sweetened cold drinks.
Mangoes are in abundance in summer. Raw mangoes are usually available & in plenty in March & April. You can easily store thick raw mango pulp in the fridge for a month & can be used to make Kairiche Panhe.

Ingredients :
- 2 Raw Mangoes
- Jaggery or Sugar to taste
- ½ tsp. Green Cardamom Powder
- ½ tsp. Chaat Masala or to taste
- ¼ tsp. Rock Salt or to taste
- A pinch of Saffron (optional)
- A pinch of Salt
Procedure :
Wash the raw mangoes well & gently lower them in sufficient boiling water.
Boil the mangoes in their jackets till they turn soft. It will take about 10 to 15 mins.
Take it off the heat & let the mangoes cool completely.
Then peel of the skin & scoop out the soft flesh from the skin & squeeze off the flesh using your hands.
Retain the pulp & discard the skin & seed.
Blend the pulp well with jaggery/sugar in a blender till it is a smooth thick paste.
You may use a hand blender or your hands as per your comfort & preference.
Transfer the paste in a clean bowl.
Add powdered cardamom, black salt, chaat masala, saffron, salt & stir well. Store this thick pulp in the fridge.
When you want to serve, pour the desired amount in a glass, top with cold water.
Stir to mix well or you may even use a blender .
Add ice cubes & serve chilled.
Procedure to extract pulp from Raw Mangoes:
You may use any of the methods mentioned below to cook raw mangoes to get pulp :
You can pressure cook mangoes. Cool, then remove the skin & seed & extract pulp.
You can peel the mangoes with a peeler or a knife. Boil till soft. Cool & then squeeze out the pulp & discard the seed.
You can peel & cut the mangoes into pieces. Cool discard the seed & prepare pulp.You can use the water in which the mangoes were boiled.
Personally, I prefer to boil the mangoes in their jackets as mentioned above.
