Palak Paneer

I fell in love with greens after I got married. My hubby & I often tried various restaurants & that’s how I was introduced to green leafy vegetables. I started reading some recipes in magazines & newspapers. I tried & loved whatever I cooked & now I just cannot do without vegetables. My boys & hubby love the veggies I dish out. This is the way I make palak paneer & everytime there are no leftovers… Enjoy this lovely  dish!!
Ingredients :
·         1 bunch fresh Spinach 
·         2 fresh Green Chillies (chopped finely)
·         2 med. Onions (chopped)
·         5 cloves Garlic (bruised & cut finely)
·         1 tsp. Ginger (grated)
·         ¼ tsp. Cumin pwd.
·         1/3 tsp. Garam Masala pwd.
·         A pinch of Sugar
·         1 cup cubed Paneer (Cottage Cheese)
·         2 tbsps. Vegetable Oil
·         Salt to taste

Method :
Pick spinach leaves with tender stalks.
Wash spinach leaves in water with a little salt & then rinse them thoroughly with water. Drain the spinach & then blanch the spinach & refresh in cool water.  
Make a rough puree of the spinach in a blender.
Heat oil in a wok on med. heat. Add garlic, green chillies & saute lightly.
Then add chopped onions ; fry till they are light brown.
Add ginger & garlic & fry well till the rawness disappears.
Add the garam masala pwd., cumin pwd., sugar & stir well.
Then add the spinach puree & saute well.
Cook till the oil starts separating slightly.
Add the paneer cubes & stir well.
Adjust salt to taste & mix well again.
Let it simmer for another 2 mins.
Garnish with pan fried wedges of tomatoes & wedges of lime.
Serve hot with phulkas,  rotis or parathas.
Variations :

·         You can add tomato puree after frying ginger – garlic.
·         You can add paneer after frying them to a light golden brown. (But I like soft paneer).
