This hearty spaghetti with mince sauce is an easy & delicious meal. My nephew Keith & his lovely wife Diya gifted us this wonderful box of three selected cheeses & semi dried tomatoes. Ingredients :
· 2 cups Spaghetti (boiled as per packet instructions)
· 2 med.Onions (finely chopped)
· 2 cups Mince (Chicken / Mutton / Beef )
· 2 cups Tomatoes (pureed)
· 2 tbsps. Tomato Ketchup
· 1 tbsp. Ginger-Garlic paste
· 5 flakes Garlic ( finely chopped)
· ½ tsp. Sugar
· 5 leaves fresh Basil (torn roughly )
· 1 sprig fresh Rosemary (leaves separated)
· 1 tbsp. dried Oregano
· 1 tbsp. Red Chilli flakes
· ½ tsp. Pepper pwd.
· 4 pieces fresh sundried Tomatoes (sliced )
· 4 tbsps. Olive Oil
· Salt to taste
· ½ cup Cheddar Cheese
Method :
Wash the mince & add ginger-garlic paste, mix & keep aside for about 20 mins.
In a pan heat 2 tbsps olive oil on med. heat. Add garlic & sauté.
Add chopped onions, stir & cook till soft.
Then add tomato puree, ketchup, sugar & cook for about 2 mins. Add mince & mix.
Add 1 cup water, salt to taste & simmer till mince is cooked & is of sauce consistency.
In a large pan boil spaghetti in salted water as per packet instructions.
Drain the spaghetti but keep it in the strainer & toss with a tsp. of olive oil.
Keep aside about a cup of the liquid in which the spaghetti was boiled.
Heat 2 tbsps. olive oil in a large wok, add the spaghetti & & toss well.
Then add the half of the mince sauce & toss again.
Now add basil, rosemary,oregano, red chilli flakes, pepper pwd, sundried tomatoes & toss well.
Add the reserved water as per the consistency desired.
Serve hot with the remaining half of mince sauce & shredded cheddar cheese.
