Ingredients :
· ¼ kg Paneer (Cottage Cheese)
· 2 med. Capsicum
· 2 med. Onions
· 2 tbsps. Tomato purèe
· 4 cloves Garlic (finely chopped)
· 1 tbsp. grated fresh Ginger
· ¼ tsp. Turmeric pwd.
· ½ tsp. Red Chilli pwd.
· 3 tbsps. Coriander pwd.
· ¼ tsp. roasted Cumin pwd.
· ½ tsp. Garam Masala pwd.
· ½ tsp. Kasuri Methi (dried fenugreek leaves)
· A pinch of Sugar
· A pinch of Nutmeg pwd.
· 3 tbsps. Vegetable Oil
· 1 tbsp. fresh Cream
· Salt to taste
· 4 tbsps. Water
· 1 tbsp. chopped Coriander leaves for garnishing
Method :
Cut paneer into thick strips.
Halve the capsicums, remove seeds & slice thickly.
Peel the onions & slice into thick strips.
Heat vegetable oil on med. heat in a kadhai (wok).
Add onions garlic, ginger & stir fry for a minute.
Then add turmeric, red chilli pwd., coriander pwd., cumin pwd. garam masala pwd.,
kasuri methi & stir fry well for another minute.
Add tomato puree, capsicum, sugar, nutmeg pwd. & fry for a minute.
Now add paneer, cream & toss well.
Sprinkle water & stir. Add salt to taste. Toss for a minute.
Garnish with chopped coriander leaves. Serve hot with phulkas, roti, or naan.
