Since the required Mozzarella, Parmesan cheese for pastas is not always conveniently available, I thought of doing something with cottage cheese instead. If you love Paneer, you’d surely enjoy this recipe… Try this one out! Happy Cooking!! =)
Ingredients :
- 1 packet dried Penne Pasta (or any pasta of your choice)
- 1 bunch fresh Spinach
- 200 gms Cottage Cheese (paneer) cubed
- 7 Cloves of Garlic(finely chopped)
- 2 med.size Onions (finely chopped)
- 4 tbsps. Extra Virgin Olive Oil
- ¼ cup Cheddar Cheese (grated)
- Salt to taste
- 1 tsp. dried Oregano
Method :
Cook pasta in a saucepan of boiling, salted water as per packet directions.
Cook al dente*.
Drain & cool the pasta. Toss with a tsp. of olive oil.
Separate fresh spinach from the stalks.
Wash spinach leaves in water with a little salt. Rinse few times till the spinach is clean.
Drain the spinach. Blanch the spinach in boiling water for 2 to 3 mins.

Drain & place the spinach in cold water for a few seconds. Drain & puree it in a blender.
In a large fry pan heat 3 tbsps.olive oil on med.heat.
Add garlic & fry till for a minute & add chopped onions. Fry till soft.
Then add the spinach puree & cook for 2 mins.
Add cubed fresh cottage cheese & toss in the boiled pasta.
Mix well, add oregano & stir for another minute.
Serve hot with grated cheddar cheese/cottage cheese.
* Al dente : Pasta should be cooked through but it should have a bite i.e. firm
but not hard.
