This summer I’ve made a conscious effort to spend minimal time in my kitchen and treat us with soothing coolants and salads. The summer is not kind to me and it really makes me sick. To feel healthy and cool I go for the salad especially since my hubby loves it. The boys are happy with cold drinks, juices, ice cream and milk shakes to beat the heat but I am happy with my fruits and veggies.
Salad making is so easy and it brings out the artistic side of me. Like an artist, the shape, color and texture of salad ingredients excite me. Just check out the vibrant colors … I find the Indian summer very drab and I long to see the bright refreshing greens, beautiful colors which make me feel real good and salads give me the much needed energy on a hot summer day.
It’s not just the visual appeal but I love the crunch in every bite and the juicy tang of orange in this salad. Simply stunning and bursting with gorgeous color, this purple cabbage & orange salad is just perfect for your summer table. Try this one and feel refreshed… 😀
Ingredients :
- ½ head Purple Cabbage (thinly sliced)
- 1 Orange (peel, skin segments & discard seeds)
- 1 Cucumber (peeled & cut into roundels)
- 1 sliced Green Capsicum (discard stem, pith & seeds)
- 1 Yellow Bell Pepper (discard stem, pith & seeds)
- 1 tbsp. black & white Sesame Seeds
Here’s how you go about fixing your salad in minutes…
Fill up your salad bowl with sliced purple cabbage, green capsicum, yellow bell pepper, roundels of cucumber and orange segments. Toss well, cover with cling film and place in the refrigerator until serving time.
For the Dressing :
- 3 tbsp. Extra Virgin Olive Oil or Salad Oil
- 2 tbsp. Apple Cider Vinegar
- 2 tbsp. Lemon Juice
- A dash of honey (optional)
- Salt & Pepper to taste
Garnishing :
- 1 tbsp. black & white Sesame Seeds (lightly roasted)
First prepare the dressing by combining all the above mentioned ingredients except the olive oil in a bowl till well mixed. While whisking, slowly pour the olive oil into the dressing in a thin stream. Keep whisking until the olive oil is well mixed into the dressing. Pour the dressing in a mason jar or a bottle with a wide mouth. Place in the fridge until serving time.
To Serve…
Just before serving, Give the dressing a good shake & pour on the salad. Mix once again & serve garnished with sesame seeds.
