Stuffed mushrooms are simple & easy to make, great to serve at parties as a starter or as an appetizer & the variations are endless. Regular fresh button mushrooms are perfect for stuffing. You can get as creative as you like with the filling & never get fed up of it! I prefer the small ones to pop in the mouth in one go as the mixture holds together as compared to the larger ones.
Here is one of my favorite stuffings.. This is absolutely perfect for a cocktail party & ideal for children as well. A mushroom cap stuffed with a divine cheesy mixture & baked until golden brown & sizzling is just something to be experienced… So how about trying out these awesome beauties & experiencing the delicious taste… Enjoy! 😀
Ingredients :
- 2 doz. Mushrooms
- 1 tbsp. Olive Oil
- 1 tbsp. Butter (optional)
- 4 cloves Garlic (minced)
- 1 med. Onion (peeled & finely minced)
- 1 bunch fresh Spinach Leaves (washed, drained & chopped)
- ¼ tsp. Red Chilli Flakes
- ½ tsp.dry mixed Italian Herbs
- ¼ cup Ricotta Cheese (optional)
- 2 cubes Amul Processed Cheese
- ½ cup Mozzarella Cheese (shredded)
- ¼ cup Panko Bread Crumbs (preferably) or normal Bread Crumbs
- Salt & Pepper to taste
Procedure :
Wash, drain & wipe the mushrooms thoroughly.
Remove the stems & dice them.
Heat a pan/skillet with olive oil & butter on med. heat.
When hot add the diced mushroom stems, minced onions, garlic & sauté for 5 mins. till soft & then lightly golden.
Add chopped spinach, chilli flakes, Italian herbs, salt & pepper to taste.
Saute till the spinach wilts & there is minimum moisture in the mix.
Remove from fire & let it cool down.
Meanwhile, combine all the cheese in a sufficiently large bowl.
Reserve some for topping & mix the bread crumbs with the cheese in the bowl.
Add in the cooked spinach mixture & give it a good mix.
Spoon the mushroom caps with the spinach-cheese mixture & use a spoon to round the mixture on top.
Place stuffed mushroom caps on a greased baking tray/dish & top with reserved cheese topping.
Sprinkle the tops with some pepper.
Bake in a pre-heated oven at 160 C. for about 20 mins. or till the mushrooms are cooked & the cheese melts.
Transfer the baked stuffed mushrooms on a platter & serve hot.
