Chocolate is everyone’s delight. Frosted Cupcakes are especially loved by children. These chocolate cupcakes with fudge frosting are delicious and soft… Today is Children’s Day and I thought this chocolate delight is apt to bring out the child in everyone. Enjoy this sweet treat! 😀
Ingredients:
- 2 cups All Purpose Flour
- 2 tsps. Baking pwd.
- A pinch – Salt
- ½ cup soft unsalted Butter
- 3/4 cup Castor Sugar
- 2 Eggs
- 1 tbsp. Vanilla Essence
- 1 cup hot Water
- ½ cup Cocoa pwd.
Procedure:
Sift together flour, baking pwd., and salt. Combine cocoa pwd. and water until smooth.
Beat butter and sugar until light and fluffy.
Beat in one egg at a time until smooth.
Add vanilla essence and mix well.
Fold in flour a little at a time until well mixed.
Then add the cooled cocoa mixture and stir to mix well.
Line a cupcake tray with paper liners.
Fill each cup with about 2/3rds full with the prepared batter and bake in a preheated oven at 180C for about 15 mins. or until risen, springy to the touch and a toothpick inserted into a cupcake comes out clean.
Transfer the baked cupcakes on a cooling rack.
Frost the cupcakes after they have cooled completely.
Frost with Chocolate Fudge Frosting and decorate as desired.
Chocolate Fudge Frosting:
Ingredients:
- 100 gms. Dark Chocolate (coarsely chopped)
- 125 gms. soft unsalted Butter
- 100 gms. Icing Sugar
- 1 tsp. Vanilla Essence
Procedure:
In a sufficiently large heatproof bowl, melt the chocolate over a pan of simmering water. Remove from heat and stir until smooth. Let it cool to room temperature.
In another sufficiently large bowl, beat butter until smooth and creamy with an electric hand blender.
Add the sugar, vanilla essence and beat until light and fluffy.
Add the cooled chocolate and beat on low speed until well incorporated.
Increase the speed to medium high and beat until the frosting is smooth and glossy.
Top and frost the cupcakes using a piping bag and your favorite nozzle.
Decorate as desired.
